Verdicchio
dei Castelli di Jesi Doc Classico Superiore
This
single-vineyard Verdicchio is produced from the grapes of
the
vineyard of the same name, placed in Montecarotto. The light
over ripening of the grapes and the lees contact give the
wine its particular characteristics of roundness and softness.
PRODUCTION
AREA : From our best Verdicchio vineyard of the same name,
which extends for 14 hectares in Montecarotto.
GRAPE
VARIETAL : 100%Verdicchio
VINIFICATION
: The very low yield (80/90 quintals/hectare) is less than
half the usual Verdicchio one. Grapes are hand harvested
when they are just overripe, and are pumped into Vaslin
presses. The unfiltered must is placed in refrigerated vats
and then transferred to small temperature-controlled stainless
steel vats, where fermentation occurs. The wine is bottled
at the end of April and refines some months more.
COLOUR
: Intense straw yellow with greenish reflections, brilliant.
BOUQUET
: Intense, round, fresh.
TASTE
: Dry, soft, with notes of ripe fruits, peach and apple.
ACCOMPANIMENT
: Ideal with fish dishes, white meat and fresh chesees.
